- 3 big carrots
- 1 kohlrabi
- 3 stems of green onions
- water
- 2 cans of coconut milk
- tabasco
- pepper, salt, sweet pepper (powder), herbs to season to your taste
what you do:
- peel and cube the carrots and kohlrabi
- put them in a pot, cover with water and add salt
- let it boil until the veggies are done; drain the water
- add the coconut milk and puree it all until you reach a smooth texture
- slice the green onions; add them to the soup as well as all your spices (I flavored mine pretty hot)
- let it all simmer for a couple of minutes so all flavors can evolve and display
- you can serve it with some balsamic vinegar and bread
