carrot soup with a twist

what you need:
  • 3 big carrots
  • 1 kohlrabi
  • 3 stems of green onions
  • water
  • 2 cans of coconut milk
  • tabasco
  • pepper, salt, sweet pepper (powder), herbs to season to your taste

what you do:
  • peel and cube the carrots and kohlrabi
  • put them in a pot, cover with water and add salt
  • let it boil until the veggies are done; drain the water
  • add the coconut milk and puree it all until you reach a smooth texture
  • slice the green onions; add them to the soup as well as all your spices (I flavored mine pretty hot)
  • let it all simmer for a couple of minutes so all flavors can evolve and display
  • you can serve it with some balsamic vinegar and bread
