mediterranean pasta salad


what you need (for 4-5 people):
  • 500 g pasta
  • 150g black olives
  • 5 dried tomatoes in oil
  • 3 fresh tomatoes
  • 250g mozzarella
  • (Parma ham)
  • (5 artichokes in oil)
  • a handful of basil leaves/spinach/rocket
  • (fresh Parmesan cheese)
  • olive oil
  • pepper
The ingredients I put in brackets are some I usually put in this pasta salad but did not this time. Just for a little variation/inspiration :)


what you do:


  • cook pasta according to instructions on the packaging
  • chop dried and fresh tomatoes, mozzarella, artichokes and ham
  • put them in a big bowl, add olives and pasta
  • wash basil leaves/spinach/rocket (whatever you choose), maybe rip them a little and add them too
  • add a sip of olive oil (I actually used some of the oil that came with the dried tomatoes because it's already seasoned) and pepper and grate some of the Parmesan cheese
  • artichokes usually taste pretty salty so you won't need any extra of that
  • enjoy :)
