my vegan/vegetarian bolognese sauce

what you need:
  • half an mid-sized onion
  • a chunk of ginger and parsley root
  • 1kg sieved tomatoes
  • a sip of multivitamin juice
  • 3 tomatoes
  • 1 red pepper
  • 2 carrots
  • 2/3 cup of red lentils
  • (1 teaspoon of sambal oelek)
  • pepper, salt, sugar, basil and Italian herbs
  • rapeseed oil
  • a hand blender

what you do:
  • chop onion, ginger and parsley root into really small pieces
  • do the same to tomatoes, pepper and carrots
  • sweat onion, ginger and parsley root with rapeseed oil
  • add sambal oelek if you like and after a couple of minutes pepper, tomatoes and carrots
  • deglaze it with sieved tomatoes
  • add red lentils and all the spices
  • let that simmer for a couple of minutes
  • blend that quickly with the hand blender
  • if the sauce gets a little to thick for you, add some multivitamin juice
