zucchini-mozzarella rolls

what you need:
  • one zucchini
  • 150-175g mozzarella
  • toothpicks
  • rapeseed oil

what you do:
  • wash the zucchini; slice really thinly
  • chop mozzarella into thumb-sized pieces
  • take a zucchini slice, put a piece of mozzarella on one end and roll it up; fix it with a toothpick
  • I actually used two slices most of the time for one roll
  • heaten up a sip of oil in your pan and fry the rolls until the zucchinis become a little brown and the cheese starts to melt; turn them every now and then
  • serve them on salad or as a side dish; I had mine with fried potatoes, so good!
  • you can always use different sorts of cheese or add some bacon or tomatoes to the rolls
