- one zucchini
- 150-175g mozzarella
- toothpicks
- rapeseed oil
what you do:
- wash the zucchini; slice really thinly
- chop mozzarella into thumb-sized pieces
- take a zucchini slice, put a piece of mozzarella on one end and roll it up; fix it with a toothpick
- I actually used two slices most of the time for one roll
- heaten up a sip of oil in your pan and fry the rolls until the zucchinis become a little brown and the cheese starts to melt; turn them every now and then
- serve them on salad or as a side dish; I had mine with fried potatoes, so good!
- you can always use different sorts of cheese or add some bacon or tomatoes to the rolls
