quinoa salad

what you need:
  • 200 g quinoa
  • 50 g amaranth
  • 1/2 bell pepper
  • 1 tomatoe
  • 1/2 zucchini
  • 50g black olives
  • 50g feta
  • 1 small onion
  • pepper, salt, olive oil, a bit tomatoe paste, italian herbs

what you do:
  • put quinoa and amaranth into a pot and cook for a couple of minutes
  • in the meantime, clean bell pepper, tomatoe and zucchini
  • chop bell pepper, tomatoe, olives and feta finely
  • rasp zucchini and slice onion finely
  • mix it all in a bowl and season with pepper, salt, olive oil, tomatoe paste and herbs
