spaghetti carbonara
what you need (for about 4 people):
- 500g spaghetti
- 300 ml cream
- 1/4 mid-sized onion
- 150g bacon (cubes or bits)
- 2 egg yolks
- about 5 chive stems, pepper, salt, nutmeg
- rapeseed oil
- Parmesan cheese (optional)
what you do:
- cook pasta according to packaging
- chop onion
- fry onion and bacon in a little oil, until bacon "lightens"
- deglaze with cream and lower the heat
- add cut up chives, pepper, salt and nutmeg
- let that simmer for a couple of minutes
- add egg yolks and stir them in
- drain spaghetti, serve with carbonara sauce and grated Parmesan cheese (if you like)
