spaghetti carbonara

what you need (for about 4 people):
  • 500g spaghetti
  • 300 ml cream
  • 1/4 mid-sized onion
  • 150g bacon (cubes or bits)
  • 2 egg yolks
  • about 5 chive stems, pepper, salt, nutmeg
  • rapeseed oil
  • Parmesan cheese (optional)
what you do:
  • cook pasta according to packaging
  • chop onion
  • fry onion and bacon in a little oil, until bacon "lightens"
  • deglaze with cream and lower the heat
  • add cut up chives, pepper, salt and nutmeg
  • let that simmer for a couple of minutes
  • add egg yolks and stir them in
  • drain spaghetti, serve with carbonara sauce and grated Parmesan cheese (if you like)
