- 1 zucchini or 1/2 of a giant one
- 1 carrot
- 1 red bell pepper
- 1 nectarine
- a thumb-sized piece of ginger
- a handful of sesame
- 1 tsp sambal oelek
- 2-3 tsp honey
- a little oil
what you do:
- chop zucchini and bell pepper
- peel and cut carrot into sticks
- chop ginger finely
- start by roasting the sesame
- then add oil, ginger and sambal oelek and fry that
- add zucchini, carrots and pepper and fry that as well
- add in honey, and blend it around
- leave that and chop nectarine
- turn off the heat, add nectarine and stir it in with the hot vegetables
- I served mine with rice and a little soy sauce
- depending on how intense you want the sweet-spicy contrast to be, change up the measurements for ginger, sambal oelek and honey; I would say mine could be ranked as middle-intense
