baked chicory ("the brussels way")

what you need (for 2 people):
  • 4 chicories
  • 4 slices of cooked ham
  • 3-4 potatoes
  • oil
  • 1/8l cream, 1/8l milk
  • pepper, salt
  • 2 tbsp lemon juice
  • 2 tbsp flour
  • some sort of cheese: you could use mozzarella, parmesan or any grated cheese

what you do:
  • peel and chop potatoes into equally sized pieces
  • peel off the outer leaves of the chicory (if necessary) and remove the ends of it in a wedged shape, if that makes any sense...meaning remove all of the stem
  • cook them in salty water for about 10 minutes or less; do the same to the potatoes until they are done
  • in the meantime, pour some oil into a pot, add flour and stir really well
  • add milk, cream, pepper, salt and lemon juice and stir that again
  • tip: if you like, add some nutmeg
  • wrap up the chicory in the ham slices, place them in a baking dish and cover with sauce and cheese
  • bake at about 180-200°C until the cheese is melted and looks nice and golden-ish
  • drain potatoes and serve with chicory
