currant-yogurt-icecream in a cup

what you need:
  • 500 g creamy curd cheese
  • 300 g plain yogurt
  • 300 g cream cheese
  • 3 tsp (blossom) honey
  • 400 g red currants
  • 10 tbsp water
  • 2 tsp sugar
  • 4 cups

what you do:
  • put currants, water and sugar in a pot and boil it for a while so the currants crack and you get a jam-ish consistency
  • let that cool down
  • in the meantime, mix curd cheese, yogurt, cream cheese and honey in a bowl and keep mixing until you get a homogeneous mass
  • fill each cup with 1/3 yogurt-mass, 1/3 currants and again 1/3 yogurt-mass
  • put that in the freezer for about 5-6 hours (I left mine in there for only about 3-4 and it was still too soft)
  • to get it out of the cup, put it into a bowl with hot water for about half a minute, then put the plate on top of the cup and turn the whole thing over
  • although it admittedly doesn't look as nice and pretty as I expected, it tasted so good!
