- 1/2 cup of cashews
- 1,5 cup hot water
- 1 cup soy or almond milk
- 1 tsp lemon juice
- 1 tbsp olive oil plus some more for frying
- 1/2 tsp salt
- 1 tsp pepper
- 150-200g mushrooms
- 1 head of broccoli
what you do:
- slice mushrooms; chop broccoli and remove the stems
- put a little oil into a pan and fry broccoli and mushrooms until they start to get softer
- then add a cup of water and let that simmer for a couple of minutes
- put cashews, 1/2 cup of hot water, soy milk, lemon juice, olive oil, salt and pepper into blender and blend until it's all smooth
- add that to broccoli and mushrooms (the water in the pan should be gone by now, if not, pour it away)
- serve with whichever vegan pasta you like
