vegan alfredo sauce

what you need (for 4-5 people):
  • 1/2 cup of cashews
  • 1,5 cup hot water
  • 1 cup soy or almond milk
  • 1 tsp lemon juice
  • 1 tbsp olive oil plus some more for frying
  • 1/2 tsp salt
  • 1 tsp pepper
  • 150-200g mushrooms
  • 1 head of broccoli

what you do:
  • slice mushrooms; chop broccoli and remove the stems
  • put a little oil into a pan and fry broccoli and mushrooms until they start to get softer
  • then add a cup of water and let that simmer for a couple of minutes
  • put cashews, 1/2 cup of hot water, soy milk, lemon juice, olive oil, salt and pepper into blender and blend until it's all smooth
  • add that to broccoli and mushrooms (the water in the pan should be gone by now, if not, pour it away)
  • serve with whichever vegan pasta you like
