- 2 big potatoes
- 2/3 zucchini
- 1/2 tomatoe
- 1/2 shallot
- some oil
- splash of cream
- splash of milk
- 1/2 tsp sambal oelek
- pepper, salt, herbes de provence
what you do:
- peal and cube potatoes, don't make them too big or they'll take forever to get done!
- chop zucchini (you can go bigger on that)
- chop tomatoe and shallot
- oil pan
- start by frying the shallot, then add potatoes
- after 2-3 minutes turn the heat down to a middle-ish setting
- add zucchini and tomatoe
- after some more minutes add milk, cream and sambal oelek
- season with pepper, salt and herbes
- let that simmer for a couple more minutes at a low setting
- as soon as the potatoes are done you can serve it!

Of course this is just one way to use up your leftovers. That's simply what I did today because I had a couple halfs of veggies in my fridge. You can adapt it to whatever you like and what you got flying around in your fridge. I bet everyone gets in this kind of a situation every now and then, so this is just to give you an idea on what you can do! :)
